Energy Bars Recipe with Rolled Oats Yum

Energy bars are a convenient and portable snack that can help give you the fuel you need to power through your day. This recipe for energy bars with rolled oats is a great way to make your own healthy snack at home. Rolled oats provide fiber and complex carbohydrates that can help keep you feeling full and satisfied. Mixed with nut butter, honey, and dried fruit, these bars are packed with protein and natural sweetness. They are also gluten-free and can be customized with your favorite mix-ins. Make a batch of these energy bars at the beginning of the week and enjoy them as a quick and healthy snack throughout the week.

Ingredients:

  • 2 cups rolled oats
  • 1 cup nut butter (such as almond or peanut butter)
  • 1/2 cup honey
  • 1/2 cup chopped dried fruit (such as dates, raisins, or cranberries)
  • 1/2 cup chopped nuts (such as almonds, cashews, or walnuts)
  • 1/4 cup chia seeds
  • 1/4 cup flaxseed meal
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat the oven to 350°F.
  2. Line a 9x9 inch baking dish with parchment paper.
  3. In a large bowl, mix together the rolled oats, nut butter, honey, dried fruit, nuts, chia seeds, flaxseed meal, and vanilla extract until well combined.
  4. Press the mixture firmly into the prepared baking dish.
  5. Bake for 25-30 minutes, or until the edges are golden brown and the mixture is firm.
  6. Allow the energy bars to cool in the pan for 10-15 minutes, then use the parchment paper to lift them out of the pan and onto a cutting board.
  7. Cut the energy bars into 12 squares or bars.
  8. Store the energy bars in an airtight container in the refrigerator for up to a week.

Optional variations:

  • Add a tablespoon of cocoa powder or chocolate chips to the mixture for a chocolatey twist.
  • Swap out the dried fruit and nuts for your favorite mix-ins, such as shredded coconut or pumpkin seeds.
