The creamy chipotle dressing is made with Greek yogurt, chipotle peppers in adobo sauce, and lime juice, and can be adjusted to your desired level of spiciness. Ingredients:

For the salad:

  • 1 cup kamut, rinsed and drained
  • 3 cups water
  • 1 red bell pepper, chopped
  • 1 small red onion, chopped
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup crumbled feta cheese
  • Salt and pepper to taste

For the dressing:

  • 1/2 cup plain Greek yogurt
  • 1-2 chipotle peppers in adobo sauce (depending on desired level of spiciness)
  • 1 tablespoon adobo sauce
  • Juice of 1 lime
  • 1/4 cup olive oil

Instructions:

  1. In a medium pot, combine the kamut and water and bring to a boil.
  2. Reduce the heat to low, cover, and simmer for 40-45 minutes, or until the kamut is tender.
  3. Drain any excess water and let the kamut cool.
  4. In a large bowl, combine the cooled kamut, red bell pepper, red onion, cilantro, and feta cheese.
  5. In a blender or food processor, blend together the Greek yogurt, chipotle peppers, adobo sauce, lime juice, olive oil, salt, and pepper until smooth and creamy.
  6. Pour the dressing over the salad and toss to coat.
  7. Season with additional salt and pepper to taste.
