Easy Barley Risotto Recipe Yum

Barley is a healthy and nutritious grain that can be used in a variety of dishes. One delicious and easy way to incorporate barley into your meals is by making a barley risotto. This recipe is a healthier alternative to traditional risotto, which is typically made with high-fat ingredients like butter and cheese. Barley has a nutty flavor and a slightly chewy texture that makes it the perfect grain for a hearty and satisfying risotto. This recipe is easy to make and can be customized with your favorite vegetables and seasonings.

Ingredients:

  • 1 cup pearl barley
  • 4 cups low-sodium chicken or vegetable broth
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup sliced mushrooms
  • 1 cup chopped kale
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions:

  1. In a large saucepan, bring the broth to a simmer over medium heat.
  2. In a separate pot or deep skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic and sauté for 2-3 minutes, or until the onion is translucent.
  3. Add the sliced mushrooms and continue to sauté for another 3-4 minutes, or until the mushrooms are tender.
  4. Add the barley to the pot and stir to combine with the vegetables.
  5. Gradually add the hot broth to the pot, one ladleful at a time, stirring constantly and waiting until the liquid is absorbed before adding more. This process will take approximately 30-40 minutes, or until the barley is tender and the risotto is creamy.
  6. Stir in the chopped kale and grated Parmesan cheese until well combined.
  7. Season with salt and pepper to taste.
  8. Serve the barley risotto hot and enjoy!

Optional variations:

  • Add diced roasted butternut squash or sweet potatoes for a touch of sweetness.
  • Top with toasted pine nuts or chopped fresh herbs, such as parsley or basil, for added flavor and texture.
