Chickpeas & Turmeric Soup Yum

These roasted chickpeas go great with this hearty turmeric soup. Crispy, spiced chickpeas are delicious as a meal or side! Turmeric is a strong antioxidant and has powerful anti-inflammatory benefits.

INGREDIENTS (3-4 servings)

Roasted Chickpeas

  • 12. oz cooked chickpeas (garbanzo beans)
  • 1 tbsp olive oil
  • 1 teaspoon curry powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground black pepper

Turmeric soup

  • 2 tsp turmeric
  • 2 tbsp olive oil
  • 1 diced onion
  • 4 cups water
  • 4 cups chicken stock
  • A squeeze of lemon juice
  • 4 cloves minced garlic
  • 1 tsp cumin
  • 1 tsp salt
  • ¼  tsp cayenne

INSTRUCTIONS

Roasted Chickpeas

  1. Preheat oven to 400°
  2. Pat chickpeas until dry
  3. Place chickpeas on baking sheet and coat in oil. Bake for 25 minutes.
  4. Take out of oven and mix in turmeric, curry, and pepper. Bake for 15 minutes
  5. Add pinch of salt and set aside.

Turmeric soup

  1. Sauté onion with olive oil in pot on medium heat until fragrant.
  2. Add cumin, garlic, and turmeric and sauté 3-4 minutes
  3. Pour in chicken stock and water and bring to a simmer. Add lemon juice and salt to taste.
  4. Adjust seasoning and lemon juice to taste.
  5. Add roasted chickpeas to soup and serve. Enjoy!
