Oat Bran Tortillas Yum

These delicious tortillas are the perfect base for any number of dishes, like enchiladas, tacos, tostadas and many more! Oat Bran is full of fiber, minerals, protein, and vitamins, and gives the tortillas a delicious nutty flavor.

INGREDIENTS (makes 8 servings):

INSTRUCTIONS
  1. Stir together all flour, oat bran, baking powder, and salt. Slowly add boiling water. Knead on a lightly floured surface for about 5 minutes, then cover and let it rest for about 10 minutes.
  2. Divide the dough into eight equal portions, and roll into balls. Flatten with a rolling pin until it reaches about 4 inches in diameter, then stack and cover to keep from drying out.
  3. Heat a pan over medium heat until evenly heated. Roll out one tortilla until paper-thin, and place in the skillet. Cook until bubbles form on top, then turn over and cook on the other side until it starts to brown. 
  4. Repeat with the rest of the dough. Make sure not to overcook, or you will end up with tortilla chips. Enjoy!

    Umm. So spelt flour doesn’t do what I am sure soft white will. I don’t ever have soft white, so I tried it. They are a bit tough, but actually, I don’t mind making tortilla chips. I will still use these firmer flats under a fish, cabbage, guac mix—kind of my version of taco salad.
