Coconut Flour Breaded Chicken

Coconut flour is great for making sweet treats, but it's not just for baking. This recipe for coconut flour breaded chicken is flavorful and healthy, and a go-to quick and easy meal!

INGREDIENTS (Makes 6 servings)

  • 3 boneless chicken breasts, cut in half
  • ¼ cup Coconut Flour
  • 2 tbsp avocado oil (or oil of choice)
  • 1-2 tbsp grated parmesan (optional)
  • ½ tsp Italian seasoning (optional)
  • ½ tsp Turmeric
  • ½ tsp paprika
  • ½ tsp onion powder
  • ½ tsp garlic salt
  • ½ tsp black pepper
  • ½ tsp sea salt

 

INSTRUCTIONS

  1. Mix dry ingredients in large plate
  2. Cover chicken in breading mix
  3. Pour oil into pan, evenly coating the bottom
  4. Sautee chicken on medium-high heat turning every 4-5 minutes, until internal temp reaches 165° F

 Enjoy!

Hi Richard,

Extra virgin olive oil should be avoided when high temp cooking (frying, roasting, etc) as It has a very low smoke point (the point at which it begins to release free radicals which can cause damage to cells in the body).

For frying, sautéing, or roasting I would recommend avocado oil. It is a very stable oil with a higher smoke point and is great at regulating cholesterol.
