Organic Cinnamon-Sugar Pumpkin Seeds

These cinnamon-sugar pumpkin seeds are a great easy dessert. Pumpkin seeds are rich with nutrients like protein, iron, magnesium, and fiber. When you pair them with brown sugar and cinnamon, they make an amazing autumn treat!

INGREDIENTS (Makes 2 cups)

  • 2 cup organic pumpkin seeds 
  • 3 Tbsp. butter, melted
  • 2 Tbsp. sucanat
  • 1/2 tsp. cinnamon
  • Dash of salt
  • 4 Tbsp. brown sugar

INSTRUCTIONS

  1. Preheat oven to 350°.
  2. Mix pumpkin seeds, butter, sucanat, cinnamon, and salt in a bowl. Pour onto a non-stick baking sheet and shake until even.
  3. Bake for 10 minutes, Shake and bake for another 10.
  4. Sprinkle 2 Tbsp. sugar, and bake for a final 10 minutes.
  5. Add the rest of the sugar, let cool, and serve. Enjoy!
