Vegan Quinoa Flour Pancakes Yum

This quinoa flour pancake recipe is nutrient-rich and includes regular rolled oat flour, ground flax, and oat milk. Fluffy, delicious vegan pancakes that take just 15 minutes to make!



  1. In a small bowl, mix the ground flaxseed and 3 tbsp water to create a flaxseed egg. Set aside.
  2. Grind the quinoa and rolled oats into flour using a grinder or food processor. In a bowl, add the flour, sugar, baking powder, and salt. Mix well.
  3. In a separate bowl whisk together the flax egg, oatmilk, and vanilla extract. Combine the wet and dry ingredients and mix until it reaches a batter constistency.
  4. In a skillet, add coconut oil and set to medium heat. Use a spatula to coat the bottom with the coconut oil. Pour ½ cup of batter for each pancake into skillet. Let each side cook for 30-40 seconds or until golden brown on both sides. Enjoy!
