Roasted Vegetable & Great Northern Bean Soup Yum

 This flavorful meal is packed full of delicious veggies and herbs. A hearty soup with great northern beans and spelt, roasted butternut squash, bok choy, and eggplant, flavored with sage and marjoram. 

INGREDIENTS

  • 1 ¼ cup great northern beans
  • ¼ cup spelt wheat berries
  • 3 cups butternut squash, cubed
  • 2 cups eggplant, cubed
  • 1 large carrot, chopped
  • 6 cups vegetable stock
  • 1 1/2 cups bok choy stalks, chopped
  • 1/2 cup yellow onion, chopped
  • 4 sage leaves, whole
  • 3 sage leaves, chopped
  • 1 tsp dried marjoram
  • 3 ½ tbsp flaxseed oil
  • 1 tsp apple cider vinegar
  • 4 cloves garlic, minced

INSTRUCTIONS

  1. Wash the beans and spelt in a strainer before adding both to a pot to soak. Soak overnight. Use a spoon to skim the surface of the water to remove any floating beans, bean shells or spelt. Drain and rinse.
  2. Move soaked beans and spelt to a large pot and add vegetable stock, sage, and marjoram. Bring to a boil. Reduce heat to a simmer and cover pot. Let simmer for 1 hours or until cooked. Add Bok choy and let simmer for about 3 minutes before removing from heat. Remove the sage leaves and test the beans and spelt to make sure they are fully cooked. Drain the vegetable broth and set aside for later.
  3. Line two baking pans with parchment paper and add squash, carrots, and eggplant. Drizzle 2 tbsp flaxseed oil over vegetables and add salt and pepper. Place both trays in the oven and cook for 20 minutes. Remove and stir before returning to the oven for another 10-15 minutes. Remove and set aside.
  4. In a large pot, sauté onions in 1 ½ tbsp oil for about 5 minutes. Add garlic and sauté for 1 more minute. Add beans, spelt, roasted vegetables, chopped sage and 3 cups of the reserved vegetable stock to the pot. Stir and cook uncovered on medium heat for 7-10 minutes. Add apple cider vinegar and stir. You may choose to add more vegetable stock to reach desired consistency. Enjoy!
