Mexican Style Quinoa & Black Bean Wrap Yum

This healthy wrap is filled with black turtle beans, white quinoa, avocado, and chicken, in a red lentil wrap!

INGREDIENTS

  • 1 cup white quinoa
  • 1 1/2 cup black turtle beans, cooked
  • 1 cup red lentils
  • 1 lb chicken breasts
  • 1/2 cup diced tomato
  • 1 avocado, diced
  • 1/3 cup plain Greek yogurt
  • 1 lime, juiced
  • 1/4 tsp lime zest
  • 2 cups water
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp chili flakes
  • 1/2 tsp salt, divided
  • 1/2 tsp pepper, divided
  • 1/3 cup chopped cilantro, plus some for serving
  • avocado oil

INSTRUCTIONS

  1. In a colander or bowl, rinse lentils until the water runs clear. Soak lentils in water for 4-5 hours. Pour into blender or food processor and blend until smooth. Do not drain lentils before blending. 
  2. Drizzle 1 tsp avocado oil in a frying pan and set to medium heat. Pour blended lentils into a pan, just enough to cover the bottom. Cook for 1-2 minutes on each side. Set aside. 
  3. Add chili powder, garlic powder, onion powder, salt, pepper, and cumin to a bowl and mix.
  4. Rub chicken with the seasoning mixture. Drizzle avocado oil in a large skillet and set to medium-high heat. Cook chicken for 5 minutes on each side until cooked through. Cut chicken into chunks and set aside.
  5. In a small bowl combine yogurt, cilantro, lime, lime zest, salt, and pepper. Refrigerate for 15-30 minutes.
  6. Combine black beans, quinoa, tomatoes, and chicken in a large bowl. Add yogurt dressing, stir, and mix in avocado.
  7. To assemble wraps, scoop 1/2 cup of filling into the center of the wrap. Garnish with cilantro. Enjoy!
