Quinoa Salad Stuffed Avocados Yum

This delicious stuffed avocados recipe makes an incredibly simple and nutritious dinner! 

INGREDIENTS

  • 1 cup cooked red quinoa
  • 1 cup cooked black turtle beans
  • 2 avocados, halved and peeled
  • 1 red pepper, chopped
  • 1 yellow pepper, chopped
  • 2 roma tomatoes, diced
  • ¼ cup cilantro, chopped
  • 2 tsp cumin
  • 1 tsp black pepper
  • 1 tbsp olive oil

INSTRUCTIONS

  1. Combine all ingredients except for the avocados in a bowl and mix well.
  2. Remove the pits of the avocados and scoop the salad mixture into the center. Enjoy!
