Microwave Blueberry Flax Muffin - Simple and Delicious
When you need a quick breakfast on the go, this is the recipe to turn to. It's a great gluten-free alternative to your typical muffin, and tastes even better! The flaxseed adds a dose of fiber, minerals and omega-3 fatty acids to your breakfast and kick-starts your day in a healthy way!

Ingredients (Makes 1 muffin)
  • 1/4 cup freshly ground flax meal
  • 1/2 tsp. baking powder
  • 1/2 tsp. coconut sugar
  • 1 tsp. cinnamon
  • 1 tsp. olive oil
  • 1 egg
  • 6-7 frozen blueberries

    Preparation Instructions:

    • Mix together the dry ingredients in a microwavable mug. In a seperate bowl, mix together the wet ingredients.
    • Whisk together the dry and wet ingredients in mug and add blueberries.
    • Cook in microwave on high for 1 minute and 30 seconds and serve warm, with butter, or your favorite jam.
