Pumpkin Spice Granola Cups Yum

These granola cups are the best! You can make them the night before for a quick and easy meal. And you can top them with anything you would like!

INGREDIENTS

  • 1 1/4 cups regular rolled oats
  • 1/2 banana, mashed
  • 3 cups yogurt
  • 1/4 cup maple syrup
  • 1/2 tsp pumpkin pie spice
  • pinch salt
  • optional) fruit to top

INSTRUCTIONS

  1. Mix mashed banana and maple syrup together in a bowl. In a separate bowl, whisk pumpkin pie spice, oats, and salt together. Combine both mixtures together and whisk again. 
  2. line a muffin baking pan with liners and spray with nonstick spray. Add the mixture to each muffin cup, pressing it up against the sides and bottom to make a cup shape. Leave in the refrigerator to sit for up to 2 hours. 
  3. Preheat oven to 350 F. Bake oat cups for about 10 minutes. 
  4. Add yogurt and top with your favorite fruit. Enjoy!
