Lemon Parsley Couscous Yum

Lemon parsley couscous is a terrific recipe for when you need a quick dinner. This adjustable recipe it makes a fantastic base for any meal!

INGREDIENTS

  • 1 cup whole wheat couscous
  • 2 tbsp olive oil
  • 1 1/4 cups chicken broth
  • 1/4 cup parmesan cheese
  • 1 tbsp lemon juice
  • 2 tbsp parsley, chopped
  • 1 clove garlic, minced
  • 1/4 tsp salt

INSTRUCTIONS

  1. In a medium saucepan, saute garlic in oil until fragrant.
  2. Add lemon juice, chicken broth, and salt, and bring to a boil.
  3. Remove from heat, pour in couscous, and cover. Stir and let sit for 5 minutes.
  4. Fluff with a fork and add parmesan and parsley. Enjoy!
