Baked Peanut Butter Banana Oatmeal Yum

This healthy baked oatmeal recipe is a delicious and easy way to start your morning. It is great for prepping breakfast or can be made fresh in just under an hour. With peanut butter, banana, and oats, this protein-packed breakfast is nourishing and super tasty!
  • 2 cups regular rolled oats
  • 1 1/2 cups oat milk
  • 1 cup mashed bananas
  • 1/2 cup creamy peanut butter
  • 2 eggs
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • brown sugar to top (optional)


  1. Preheat oven to 350F
  2. line a baking dish with parchment paper
  3. Add bananas, peanut butter, eggs, and milk to a bowl and mix. Make sure mashed bananas are fully combined with no clumps.
  4. Add regular rolled oats, nutmeg, and salt and stir.
  5. Pour mixture into lined baking pan and sprinkle with brown sugar if desired. Cook for 45-50 minutes and let cool. Enjoy!
