Toasted soybeans are an easy and savory snack! Soybeans are high in protein, iron, and calcium, and can be added to many dishes or just eaten plain.

INGREDIENTS (makes 2-3 servings)

  • 1 cup uncooked soybeans
  • 1 tbsp oil
  • 1 tsp salt
  • 2 tsp chili powder

(adjust seasoning to taste)

INSTRUCTIONS

  1. Soak soybeans for 5-6 hours or overnight.
  2. Preheat oven to 350 f and line a baking sheet with wax paper.
  3. Strain soybeans and fully dry them with a towel.
  4. In a medium size bowl, mix together soybeans, salt, oil, and chili powder.
  5. Spread mixture evenly on baking sheet and place in oven for 15-17 minutes, then remove and flip soybeans to get an even roast.
  6. Place back in oven and repeat flipping them every 7 minutes until all soybeans are crunchy. Enjoy!
