Organic Buckwheat Salad Yum
Fresh and easy to make, this salad makes a truly delicious lunch or side dish. Buckwheat Groats are packed with important protein, fiber, vitamins and minerals. To pump up the protein, try adding grilled chicken or fish.

Ingredients (Makes 1 serving):
- 1/2 cup cooked buckwheat groats
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped kalamata olives
- 1/4 cup vinaigrette
- chopped parsley (optional)
- Mix cooled buckwheat groats with feta and olives.
- Toss with vinaigrette and serve with a sprinkle of chopped parsley
