Buckwheat Salad Yum

Fresh and easy to make, this salad makes a truly delicious lunch or side dish. Buckwheat Groats are packed with important protein, fiber, vitamins, and minerals. To pump up the protein, try adding grilled chicken or fish.

INGREDIENTS (Makes 1 serving):
  • 1/2 cup cooked buckwheat groats
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped kalamata olives
  • 1/4 cup vinaigrette
  • chopped parsley (optional)

    INSTRUCTIONS

    1. Mix cooled buckwheat groats with feta and olives.
    2. Toss with vinaigrette and serve with a sprinkle of chopped parsley
