Meat Pasties Yum

A delicious representation of the tradition Cornish Pasty, these are the most wonderful thing to eat on a cold night, hearty and the filling is simply bursting with flavor! Enjoy with a warm cup of soup or a refreshing bowl of salad.

INGREDIENTS (5 pasties)
  • 2 1/2-3 cups soft white wheat flour
  • 1 1/2 tsp yeast
  • 1 tbsp sugar
  • 1 cup warm water
  • 1 1/2 tsp salt 
  • 1/ lb. chiffonaded spinach
  • 1/2 cup minced onion
  • 2 cloves crushed garlic
  • 1 lb. bulk Italian sausage
  • 2 cups mozzarella
  • 1 lb. ricotta
  • 1/2 cup parmesan
  • Salt and pepper to taste

    INSTRUCTIONS

    Filling

    1. Cook the sausage until no longer pink and slightly browned.
    2. Saute the onions and garlic in the sausage fat and add the spinach until deep green and wilted.
    3. Set aside the sausage, spinach, garlic, and onions and let it cool.
    4. Mix together the cheese and the sausage, spinach, onions, and garlic.

      Dough

      1. Mix together the yeast and sugar in the lukewarm water for ten minutes.
      2. Add salt and flour, and knead for ten minutes. Place in an oiled bowl for one hour.
      3. Once the dough has risen, punch it down and divide into six sections.
      4. Roll out each of the six sections into circles 1/4 inch thick.
      5. Fill with 1/2-3/4 cup of the filling, moisten the edges of the circles and fold in half.
      6. Crimp the edges with a fork, and bake on a buttered tray in an oven at 450ºF for 15-20 minutes.
      7. Serve fresh out of the oven. Enjoy!
