Lemon-Blueberry Scones - Simple and Delicious
The perfect treat to have with a cuppa, this classic pastry is surprisingly easy. The lemon comes through with a splash of color on your palate, while the blueberries come through as a splash of color on your plate. The classic combination of blueberries and lemons is truly at it's best in this recipe.

Ingredients (makes 8 scones):
  • 2 1/2 cups soft white wheat flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 tbsp. sugar
  • 1 1/4 cup cream
  • 1/2 cup blueberries
  • 1/4 tsp. lemon extract
  • zest of 1 lemon

Optional Lemon Glaze

  • 1 cup powdered sugar
  • 1 tbsp. milk
  • 1 tbsp. lemon juice
  • zest of 1 lemon

    Cooking Instructions:

    • Preheat oven to 375°.
    • Whisk the flour, salt, baking powder and sugar together in a large mixing bowl.
    • Mix in the cream and lemon zest until dough is no longer crumbly. If too crumbly add a splash more cream, if too sticky add a bit more flour. * 
    • In a small mixing bowl combine blueberries and lemon extract.
    • Turn the dough out on a sheet of parchment paper and gently pat into a 1/2 inch thick square. 
    • Gently place the blueberry-lemon extract mixture on the dough and spread evenly across. 
    • Roll dough into a log and pat the cylinder into a  slightly rounded rectangle.
    • Cut the rectangle into 8 triangles and place on a parchment paper covered pan.
    • Place in oven and bake for 15-18 minutes and let cool.

    Optional Lemon Glaze

    • Whisk powdered sugar with milk and lemon juice.
    • Stir in the lemon zest.
    • Pour over scones once completely cool

     *Note: Remember, you are simply mixing, not kneading. Over-mixing can lead to an unappetizingly tough pastry. Be sure to keep a light touch.
