Chickpea Hummus Yum

This classic snack is delicious spread on a piece of whole-wheat toast or served with vegetables and chips. It is healthy, filling, and packed with fiber and protein so you can eat it guilt-free!

INGREDIENTS (Serves 6):

  • 1 1/2 cups cooked organic chickpeas 
  • 1/4 cup lemon juice
  • 1/4 cup tahini
  • 1 garlic clove, minced
  • 2 Tbsp. extra-virgin olive oil
  • 1/2 tsp. ground cumin
  • Salt, to taste
  • 2-3 Tbsp. water
  • Dash of paprika

INSTRUCTIONS

  1. In a food processor, blend tahini and lemon juice for one minute. Add the olive oil, garlic, cumin, and 1/2 tsp. salt. Process until well blended.
  2. Add half of the chickpeas, and process for 1 minute, then add the rest and blend until smooth and creamy.
  3. If needed, add water to reach desired consistency.
  4. Serve with a drizzle of olive oil and a dash of paprika. Enjoy!
