Green Lentil Curry Yum

This delicious spicy curry recipe is a super nourishing dish that is incredibly simple!


  • 2 cups green lentils
  • 1 tsp turmeric
  • 1 large onion finely diced
  • 4-5 garlic cloves minced
  • 1 tbsp olive oil
  • 1 tsp curry powder
  • 1 tsp cumin
  • 1 tsp salt
  • 1 3/4 cups soy milk
  • 6 oz can tomato paste
  • 3 cups water


  1. Add oil, onion, and garlic to a medium saucepan and cook until lightly browned. Then add turmeric, cumin, curry powder, and salt. 
  2. Add the lentils, water, tomato paste, and soy milk to the pan and bring to a boil. Cover and cook for 37-43 minutes. Remove from heat and let cool. Enjoy!
