Crêpe Bretonne Yum

This Crêpe Bretonne is unbelievably simple and delicious. With only a few simple ingredients, it is a super simple and savory way to start the day! Save any leftover dough in the fridge for a quick breakfast starter.

INGREDIENTS (Makes 4 crêpes)

  • 1 cup ground buckwheat
  • 5 eggs
  • 1 1/4 cup water
  • 4 tbsp butter
  • 4 slices of ham
  • 4 slices of cheese
  • salt and pepper to taste

INSTRUCTIONS

  1. Mix together buckwheat flour, one egg, and water to create a liquid dough consistency. 
  2. Add butter to a medium size pan and set on medium heat.
  3. Pour enough mixture into pan to cover the bottom, moving the pan around to cover it. Sautee and then flip until golden brown on both sides
  4. Now add the cheese, ham, and egg to the crepe. To cook the egg, simply add them to the center of the crepe after the cheese and ham, and season with salt and pepper. Fold the sides of the crepe onto each other and cook until eggs are done.
  5. Serve with desired garnish. Enjoy!
