Buttermilk Biscuits Yum

Light and airy, these biscuits taste just the way a real southern biscuit should, but are packed with protein and fiber from fresh-ground, soft white wheat flour. Delicious served warm, slathered in butter, or served beside your favorite soup.

INGREDIENTS (Makes 8 round biscuits):
  • 3 cups (15.75 oz) freshly ground organic soft white wheat flour
  • 1 1/2 tsp. salt
  • 1 tbsp. baking powder
  • 1 tbsp. sugar
  • 5 tbsp. unsalted butter or shortening
  • 1 cup buttermilk

      INSTRUCTIONS

      1. Assemble ingredients and preheat oven to 425°.
      2. Whisk together flour, salt, baking soda and sugar
      3. Using a pastry cutter, cut in butter until mixture is coarse in texture and resembles peas in size.
      4. Add buttermilk quickly, then mix until a soft dough forms.
      5. Knead dough on a lightly floured surface gently until it reaches a more thoroughly combined consistency.
      6. Roll out dough 3/4 inch thick, then cut into 8 biscuits.
      7. Put biscuits on a cookie sheet lined with parchment paper (optional: brush biscuits with melted butter) and bake for 12-18 minutes, or until golden brown.
      8. Take biscuits out of oven and serve immediately, or cool on baking rack and store tightly covered for up to four days. Enjoy!
