Barley Flour Chocolate Chip Cookies Yum

These barley flour cookies are an amazing treat!. Barley flour is very nutritious as it is high in many vitamins and minerals, as well as fiber. 

INGREDIENTS

  • 2 cups barley flour
  • 3/4 cup unsalted butter
  • 1 cup sucanat
  • 1/4 cup sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 1 tsp baking soda
  • 8 oz semi-sweet chocolate chips
  • 1/2 tsp salt

 INSTRUCTIONS

  1. In a large bowl, beat butter, sugar, egg, and sucanat until smooth.
  2. Mix in flour, salt, and baking soda, and then fold in the chocolate chips.
  3. Roll medium-sized balls of cookie dough onto baking sheet and bake for 10-12 minutes (or until golden brown) at 350°.
  4. Let cool for 2-3 minutes. Enjoy!
