Buckwheat Banana Bread Yum

This delicious buckwheat banana bread is a healthy treat! Buckwheat flour is a great substitute for whole wheat for those who want gluten-free option.

Kitchen Test: 6/10/2021

INGREDIENTS

  • 1 3/4 cups buckwheat flour
  • 1/4 cup sucanat
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 tsp vanilla extract
  • 1/3 cup coconut oil
  • 4 very ripe bananas
  • 1 teaspoon baking soda
  • ¼  teaspoon kosher salt

INSTRUCTIONS

  1. Preheat oven to 350˚F
  2. Mix bananas, oil, and sucanat with a hand-mixer.
  3. Add flour, cinnamon, nutmeg, vanilla, baking soda, and salt and mix well.
  4. Pour batter into greased bread pan and place in oven. Cook for 45-50 minutes
