Blueberry Chia Seed Pudding Yum

This delicious new twist to our overnight chia pudding is perfect for a summer morning! Blueberries and chia seeds are full of nutrients like fiber, vitamins, and minerals, making it the perfect nutritious breakfast.

INGREDIENTS

  • 6 tbsp chia seeds
  • 2 cups unsweetened coconut milk
  • 1/4 cup frozen blueberries
  • 2 tsp honey

INSTRUCTIONS

  1. Blend blueberries, honey, and coconut milk until smooth.
  2. Add chia seeds and stir well. Leave mixture to settle for 5 minutes and stir again. Place in refrigerator and leave overnight.
  3. Serve topped with fresh blueberries. Enjoy!
