Tumeric-Ginger Sauce Yum

This sauce is so simple, delicious and it has a slight kick. It's perfect for spicing up rice, chicken or really anything! Turmeric can help with inflammation, and it also serves as a powerful antioxidant.

INGREDIENTS (makes 12 Tbsp):
  • 1 Tbsp. coconut oil
  • 1 Tbsp. chopped onion
  • 1 carrot
  • 1 tsp. turmeric
  • 3 cloves minced garlic
  • 1 1/2 tsp. chopped fresh ginger
  • 2 Tbsp. water
  • 1 /4 cup greek yogurt
  • 1 Tbsp. apple cider vinegar
  • 1/4 tsp. salt
  • 1/4 tsp. ground cumin
  • Dash of ground red pepper

 

    INSTRUCTIONS
    1. Heat coconut oil over high heat until melted. Add onion, carrot, turmeric, garlic, and ginger. Cook for 30 seconds, add water and reduce heat.
    2. Simmer for 7 minutes, and place in blender with yogurt, apple cider vinegar, salt, cumin, and red pepper. Blend until smooth, and serve warm. Enjoy!
