    • 1 can (14.5 oz) diced tomatoes
    • 1 tsp smoked paprika
    • 1 tsp cumin
    • 1 tsp oregano
    • ½ tsp crushed red pepper flakes (adjust to taste)
    • Salt and pepper to taste
    • 1-2 cups vegetable broth
  • For the Zesty Sauce:

    • 2 tbsp tomato paste
    • 2 tbsp hot sauce (or to taste)
    • 1 tbsp Worcestershire sauce (or soy sauce for a vegan option)
    • 1 tbsp apple cider vinegar
    • 1 tsp brown sugar
    • Juice of 1 lime
  • To Serve:

    • Fresh cilantro, chopped
    • Lime wedges
    • Crusty bread or steamed rice


  1. Prepare the Beans:

    • If using dried navy beans, soak them overnight in plenty of water.
    • Drain and rinse the beans, then place them in a pot with fresh water.
    • Bring to a boil, reduce heat, and simmer until tender (about 1-1.5 hours). Drain and set aside.
  2. Sauté Vegetables:

    • In a large skillet or pot, heat olive oil over medium heat.
    • Add the onion and sauté until translucent, about 5 minutes.
    • Add garlic and mushrooms, and cook until mushrooms are softened and slightly browned.
  3. Add Seasonings and Tomatoes:

    • Stir in smoked paprika, cumin, oregano, and red pepper flakes.
    • Add the diced tomatoes and vegetable broth. Bring to a simmer.
  4. Combine and Simmer:

    • Add the cooked navy beans to the skillet.
    • Mix in the zesty sauce ingredients (tomato paste, hot sauce, Worcestershire/soy sauce, vinegar, brown sugar, and lime juice).
    • Simmer for 15-20 minutes, allowing the flavors to meld together. Add more broth if needed.
  5. Season and Serve:

    • Taste and adjust seasonings with salt, pepper, and additional hot sauce if desired.
    • Serve garnished with fresh cilantro and lime wedges.
