Chocolate Caramel Popcorn Crunch (a.k.a. Moose Munch) - Holiday Recipe Yum

Chocolatey, caramelly, crunchy, popcorn perfection! Tough to stop eating once you have started... and it seems to taste even better when paired with a festive drink and a fun holiday movie. [An organic, home-made variation of Harry & David's "Moose Munch"].

INGREDIENTS (Serves 8 to 10):
  • 12 cups certified organic yellow popcorn
  • 1 cup crushed almonds
  • 1 cup firmly packed organic brown sugar
  • 3/4 cup butter
  • 1/2 cup maple syrup
  • 1 tsp baking soda
  • 1 cup dark chocolate
  • 1.5 tsp coconut oil

    INSTRUCTIONS

    1. Lightly salt popcorn while popping.
    2. Preheat oven to 250F
    3. Evenly pour popcorn and nuts into a large roasting pan.
    4. In a saucepan, combine brown sugar, butter, and maple syrup. Cook over medium heat for about 8 minutes.
    5. Continue boiling for 2 minutes.
    6. Remove pan from heat and mix in baking soda.
    7. Pour slightly cooled mixture over popcorn and nuts and stir well so that the popcorn is evenly coated.
    8. Bake for 15 minutes, turning the pan halfway through.
    9. Remove from oven and transfer popcorn to wax paper (do not break into chunks). 
    10. Allow it to cool completely.
    11. Melt chocolate chips with coconut oil in the microwave in 30-second intervals stirring after each one.
    12. Using a spoon, drizzle chocolate over the popcorn and let stand 3-4 hours until chocolate is set. Break into pieces and enjoy!
