Spelt & Oat Bran Muffins Yum

These spelt & oat bran muffins are a delicious and healthy treat that is incredibly simple and easy to make!
INGREDIENTS
  • 1 ½ cups oat bran
  • 3/4 cup all-purpose flour 
  • 3/4 cup spelt flour
  • ½ cup brown sugar
  • 2 eggs 
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1 cup applesauce
  • 4 tbsp vegetable oil
  • ½ tsp salt

INSTRUCTIONS

  1. Line muffin pan with 12 muffin cups and preheat oven to 400 degrees.
  2. Mix together all dry ingredients in medium bowl. Add eggs, oil, and applesauce. Stir well.
  3. Spoon in mixture slightly more than halfway in the muffin tray. 
  4. Bake for 17-19 minutes until golden brown. Enjoy!
