Ingredients:

For the Stew:

  • 1 cup green lentils, rinsed and drained
  • 2 medium eggplants, diced
  • 4 ripe tomatoes, chopped
  • 4 cloves garlic, minced
  • 1 large onion, diced
  • 2 tbsp olive oil
  • 4 cups vegetable broth
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp smoked paprika
  • 1/2 tsp turmeric
  • 1/4 tsp chili flakes (optional for heat)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

For the Sour Cream Sauce:

  • 1 cup sour cream
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Fresh thyme sprigs for garnish

Instructions:

1. Prepare the Stew:

  1. Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  2. Add the Spices: Stir in the cumin, coriander, smoked paprika, turmeric, and chili flakes (if using). Cook for about 1-2 minutes, allowing the spices to bloom and become aromatic.
  3. Cook the Vegetables: Add the diced eggplant and cook until it begins to soften and absorb the flavors, about 5 minutes. Then, add the chopped tomatoes and cook until they start to break down and form a sauce, another 5 minutes.
  4. Add the Lentils and Broth: Stir in the green lentils and vegetable broth. Bring the mixture to a boil, then reduce the heat to low and let it simmer. Cover the pot and cook for about 30-40 minutes, or until the lentils are tender and the stew has thickened. Stir occasionally to prevent sticking.
  5. Season and Serve: Season the stew with salt and pepper to taste. Adjust any other seasonings as needed.
