Baked Pumpkin Oat Bars Yum

Pumpkin spice is back in season! As we near the end of summer, it's time to bring back this fall favorite. Try these delicious baked pumpkin oatmeal bars. You can bake these ahead of time and store in the fridge or enjoy them fresh out of the oven!


  • 1 cup regular rolled oats
  • 1/2 cup kamut wheat flour (ground wheat berries)
  • 1 tbsp chia seeds
  • 1 tbsp ground flaxseed
  • half a can of pumpkin puree (about 1 cup)
  • 1/4 cup dried cranberries (or dark chocolate chips)
  • 2 eggs
  • 1/4 cup maple syrup
  • 3 tbsp coconut oil
  • 1 tsp cinnamon
  • 1/4 tsp ginger
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice
  • 1 tsp baking powder
  • 1/4 tsp baking soda


  1. Preheat oven to 325*F
  2. Line a square baking pan with parchment paper leaving some extra on the sides for easy removal.
  3. Mix all ingredients in a large bowl.
  4. Pour mixture into baking pan. Smooth out the surface of the batter with a spoon.
  5. Bake for 25-30 minutes or until golden brown. Remove the baked oats and cut into bars. Enjoy!
