Whole grains have an edible portion called a 'kernel'. This core contains three major components: bran, germ and endosperm. The most important parts from a health-perspective are the bran and the germ- precisely what processed grains are missing! Since these are removed during the milling process, the only remaining part is the endosperm. The missing elements account for processed flour’s smooth texture and shelf life. But, without the bran and germ, the flour is also devoid of the all the key nutrients such as fiber, iron, and B vitamins.
Whole grains include all three parts of the kernel and provide us with all the nutrients that God intended for us from these foods such as healthy complex carbohydrates, dietary fiber, vitamins, minerals, healthy fatty acids and antioxidants.
