Pumpkin seeds (also known as pepitas) are flat, dark green seeds. Sometimes the seed may be encased in a yellow-white shell while other varieties produce seeds without the shells. Pumpkin seeds come with a soft, chewy texture and offer a subtly sweet and nutty flavor. They also make a great healthy snack, as they contain many important nutrients.
Health benefits of pumpkin seeds
Pumpkin seeds are a good source of protein and also offer good supplies of various minerals like zinc, magnesium, manganese, phosphorous, and copper. Additionally, pumpkin seeds contain a wide variety of antioxidant poly nutrients as well as health-supportive phytosterols.
Pumpkin seeds should be stored in an airtight container in the refrigerator. They do not keep their peak freshness for very long when compared with other types of edible seeds. While they may remain edible for many months, they are likely to lose their optimal freshness after about a month or two.
