Green Lentils - Simple Prep Yum

Green lentils are extremely versatile, and this recipe is super easy and delicious!  It can be added to soups, stew, salads and more to add an extra punch of protein, fiber, and iron.

INGREDIENTS (makes 4 servings):
  • 1 cup uncooked green lentils
  • 2 cups water
  • 1 garlic clove
  • 1/4-3/4 tsp. salt
INSTRUCTIONS
  1. Put everything except the salt into a medium pot, and bring to a boil over medium-high heat.
  2. Reduce to a very gentle simmer, and cook, uncovered, for 20-30 minutes. Add salt as needed. Enjoy!
