Chocolate Mug Cake Yum

This chocolate treat is the quickest way to satisfy your sweet tooth. It's delicious and the sucanat makes it just sweet enough, but it's a much healthier option than cane sugar. It is best served warm, with butter or even plain.

INGREDIENTS (1 cake)
  • 3 Tbsp. soft white wheat flour
  • 2 Tbsp. sucanat
  • 1/4 tsp. baking powder
  • 3/4 tsp. cocoa powder
  • 1 Tbsp. butter (melted)
  • 1 Tbsp. milk
  • 1 egg yolk
  • 1/2 tsp. vanilla extract

    INSTRUCTIONS

    1. Place the butter, egg yolk, milk, and vanilla extract in a ramekin greased with coconut oil, and whisk briskly until completely combined. 
    2. Add the dry ingredients (including the sugar) into the wet ingredients and stir until just mixed (if it is whisked too much, the cake will be tough).
    3. Put in the microwave and heat it for 1 minute. Stick a toothpick in, if it comes out clean the cake is ready. If it comes out with some batter clinging to it, pop it back in for 15 more seconds and repeat until the toothpick comes out clean. Enjoy!
