Cranberry Oat Bread Yum

This is a delicious way to start your Christmas morning (or any morning) that is packed with fiber and nutrients that start out your day great! This oat bread is fabulous served with a pat of butter, but it is simply divine when topped with yogurt, syrup, and some dried cranberries. Enjoy!

INGREDIENTS (12 servings):
  • 2 1/2 cups soft white wheat flour
  • 1 cup whole rolled oats
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. ground cinnamon
  • 1/8 tsp. ground nutmeg
  • 3/4 cup honey
  • 1/3 cup greek yogurt
  • 2 eggs
  • 1/2 cup milk
  • 1 cup dried cranberries (or 2 cups fresh)

    INSTRUCTIONS

    1. Preheat the oven to 350° and oil a 9x5 inch pan with coconut oil.
    2. In a large bowl combine all the dry ingredients except for the cranberries. In a small bowl stir together the yogurt, honey, eggs, and milk. 
    3. Mix the bowl of dry ingredients into the wet ingredients and stir in the cranberries.
    4. Pour into the loaf pan and bake for 40 minutes, or until a toothpick placed in the center of the loaf comes out clean. Enjoy!
