Gluten-Free Chocolate Oat Cookies Yum

These cookies are rich, fudgy, and positively divine. The best part is, they're gluten-free! The oats add fiber, minerals, vitamins, protein, and delicious flavor! And, of course, who doesn't love fudgy chocolate? This wonderful house-warming gift or dinner party dessert is sure to be a hit!
BSF Kitchen Test: 08/18/17
INGREDIENTS (2 dozen cookies):
  • 1 cup sugar
  • 4 tablespoons cocoa
  • 1/8 tsp. salt
  • 1/2 cup coconut oil
  • 1/2 cup milk
  • 1/2 cup peanut butter
  • 3 cups whole rolled oats
  • 1 tsp. vanilla extract

    INSTRUCTIONS

    1. Place sugar, cocoa, salt, coconut oil and milk in a medium-sized pot and bring to a boil.
    2. Boil for 1-minute stirring continuously, take off heat, and let sit for another minute.
    3. Stir in peanut butter and vanilla. Mix until peanut butter dissolves.
    4. Add oats and mix well.
    5. Drop tablespoon-sized cookies onto parchment-lined cookie sheet and cool in refrigerator for 45 minutes.
