Brown Rice Stuffing Yum

This brown rice stuffing is the perfect substitute for the carb-filled stuffing that tends to make an appearance on the table at Christmas dinner. It's healthy, light and bursting with flavor, and the best part is that it's a super simple recipe. It can be enjoyed stuffed inside your turkey, or as a side dish.

INGREDIENTS (makes 8-10 servings):
  • 1 1/2 cup cooked organic brown basmati rice
  • 2 tsp. extra virgin olive oil
  • 1 apple cored and diced
  • 1/2 cup diced onion
  • 1/2 cup chopped Brussels sprouts
  • 4 cloves of garlic, pressed
  • 1 carrot, peeled and chopped
  • 1 cup diced celery
  • 1/3 cup oat bran
  • 1/2 cup dried cranberries (unsweetened)
  • 1/3 cup slivered raw almonds
  • 1/2 tsp. poultry seasoning
  • 1/4 tsp. thyme
  • Freshly ground pepper


    1. Heat the olive oil in a large skillet over medium heat, and cook all fruits and vegetables until crisp. Add rice, oat bran, almonds, cranberries, pepper, thyme and poultry seasoning.
    2. Use as stuffing for your turkey!

      For serving as a side dish

      1. Bake at 350° 20 for minutes and serve fresh out of the oven.
