Couscous makes a fantastic base for a side or dinner. It is best served with vegetables and some kind of protein to make it a nutritious and filling meal. Some other things to serve with couscous are chicken, roasted vegetables, shrimp, sauteed onions, chickpeas, etc. Herbs are another thing you can add to your couscous to add some more flavor. Because couscous is such a good base, you can add almost any of your favorite produce or protein to make a great dinner.

Cooking the couscous plain is also an option, you can even add lemon juice or zest to add a bit of flavor. Add 2 ¾ cups water or chicken broth to a medium size pan and bring to a rolling boil. Take the pan off the heat, salt the water, and add 1 ½ cups couscous. Return to boil, cover, and let sit for 5 minutes. Fluff with a fork. Add pepper or lemon zest if preferred and serve. To store dry couscous you will need to keep it in an airtight container in a dry place. Store in a covered container in the fridge if couscous is cooked. Cooked couscous will keep for 2-3 days. Dry couscous won't expire if it is stored properly.
