In the past few weeks we have learned about the origin and health benefits of black beans, here are some tips and tricks when it comes to preparing them.

How to cook black turtle beans

Black turtle beans are like any other dry bean, in that they are better soaked before consumed to wash away the nasty stuff that can cause discomfort while digesting. In a sink, rinse the beans in a colander making sure to mix them around to thoroughly wash them. It might take 2-3 rinses until water comes out clear. After that, pick through and remove any small inedible bits and pieces. After washing, pour the beans into a large pot and add enough water to generously cover the beans. It is recommended to soak overnight, 7-8 hours. If you don't have enough time for that it is okay to soak for as little as 1 hour before preparation, although it wont be as effective in cleaning them. after soaking, strain beans. 

Put the beans in a pot on the stove, add enough water to fully cover the beans 2 inches over. Bring to boil for 2-3 minutes and set to simmer and cover for 2 hours (Tip: slightly tilt the lid to prevent beans from boiling over onto stove). Adding things like garlic, bay leaves, onions, bell peppers, and spices to the water will bring out an incredible flavor in the beans. When they are fully cooked, they should have absorbed the extra water leaving just the beans. A great thing about buying dry beans is that you can decide how much sodium you want in them. Add salt to taste, or go completely salt free!

These beans go with practically anything, you can incorporate them into the main dish, or just prepare as a healthy side. Serve with rice for a quick and and easy meal!
